We found this recipe at a local bed and breakfast. They were serving this for dinner and it was a real HIT. It's easy to fix as well.

Ingredients For ritz cracker baked chicken

4 to 6chicken breasts, boneless and skinless

1/2 stickmelted butter

2 ccrushed ritz crackers

1 1/2salt and pepper (too taste)
How To Make ritz cracker baked chicken

1combine crushed crackers, salt and pepper in a bowl. Wash chicken breasts and pat them dry with a towel.

2Dip each chicken breast in melted butter and then dredge through cracker mixture. Place on a greased baking sheet at 350. I cover my baking dish with foil to keep juicy. You can add extra butter at end of cooking time if needed. Normal cook time is 30 to 40 minutes.
