This recipe went around the world in a book we sold together called "Competition BBQ Secrets" with my brother. (My brother still sells the book.) My husband & I developed the unique recipe after I tried some raspberry-walnut dressing on chicken with spinach in a Walmart one day. We reconstructed the recipe to fit with our bbq competition endeavors. The bbq circuit awarded us many times with this recipe. I hope you enjoy it.

Ingredients For rasberry walnut smoked chicken

  • 2 bottle
    ken's raspberry-walnut salad dressing
  • 1 bottle
    (large bottle) ketchup
  • 1 bottle
    (large bottle) honey
  • 1
    family pack of chicken thighs
  • 1 bottle
    cook shack's spicy chicken rub, or favorite spicy chicken rub
  • 1 sm
    bag of hickory wood chips, pellets or equal
  • 1 sm
    bag of apple wood chips, pellets or equal

How To Make rasberry walnut smoked chicken

    Start smoker at 275' to 300' range, and then refrigerate the 2 bottles of Raspberry walnut salad dressing. Chilling it down reduces any bacteria growth on chicken. Also chilling the chicken reduces bacteria growth. Optimal temperature is below 40'F. Once chilled use a 1 gallon freezer bag and put chicken in it and 1 whole bottle of salad dressing. We marinate it for 3 or 4 hours and discard the marinate afterwards.

    Pat chicken simi-dry after marinating, do not rinse off. Chicken will be very pink from raspberry, and wetness will be binder for chicken rub. Next sprinkle rub underneath chicken skin and on top of chicken. Tuck chicken skin underneath. At this point, if smoker is up to temp, place chicken on smoker skin side up. Smoking for 1 hour, spraying with apple juice, then turning chicken over after 1st hour. Continuing to spray every 30 minutes. After 2 hours cooking/spraying chicken, we glaze with raspberry walnut bbq sauce (see recipe next). After cooking 2 hours, chicken should be tender and moist.

    Next, make raspberry walnut bbq sauce. Empty 1 bottle of salad dressing into a bowl, squeeze ketchup into empty salad dressing bottle as a measure of equal parts and squeeze that ketchup into same bowl. Then measure honey into salad dressing bottle, and squeeze honey into bowl. You will have approximately equal measures of each in bowl. Stir mixture well. Glaze the chicken and let sit on smoker for about 5 minutes to thicken. Chicken is done in 2 hours, but glaze can set in just a few minutes on a hot smoker.
