I don't remember where I got this recipe, I have had it for about 14yrs. My daughter renamed it, Pinch Chicken, because she eats it with a tortilla and no silverware.

Ingredients For pinch chicken

8 - 10pieces of chicken, cleaned and patted dry

1large can of refried beans

1large can of green enchilada sauce
-
1 - 2 cupsgrated monterey jack cheese

1envelope of taco seasoning
How To Make pinch chicken

1Spread refried beans in a 9 x 13 baking dish

2Place chicken pieces on top of refried beans and sprinkle with all the taco seasoning.

3Mix cheese and enchilada sauce in a small bowl, and spoon over chicken.

4Bake at 350 for 1 hour, serve with salad and warm flour tortillas.
