My mom would start out w/ some chicken and then add what ever she had in the pantry. So, it came out different ways each time, but it was always good.

Ingredients For moms pantry chicken.

  • 2 Tbsp
    olive oil, extra virgin
  • 1/2 tsp
    salt.
  • 8
    good sized chicken thighs, skinned
  • 1
    onion, chopped.
  • 2
    14 oz cans cannellini beans, drained.
  • 1
    28 oz can diced tomatoes, juice reserved.
  • 2 Tbsp
    tomato paste, italian
  • 1 Tbsp
    dried tarragon
  • 2 tsp
    garlic powder
  • 1/4 tsp
    red pepper flakes

How To Make moms pantry chicken.

    In a 6-quart pot over medium heat, sprinkle chicken w/ salt and cook in pot for 20 min, turning occasionally. Add onion, saute 2 mins. Add remaining ingredients and mix well. Bring to a boil. Reduce heat to low and simmer 20 min, or until chicken is cooked through.
