When my husband cooks, it's a little of this, and a spoonful of that. He NEVER measures anything. That means that no two meals are (or can be!) ever duplicated. However, when he created this one, it got a 10 from everyone in the family, so I literally had him remake it later in the day so I could measure the ingredients before they went into the pot. Successfully created and deliciously duplicated!

We love dinner recipes that are super easy to prepare and pack a punch of great flavors. This chicken recipe is one of them! The sauce is sweet, spicy, and peanut buttery. Each ingredient compliments the other. The flavors remind us of a few Thai dishes we've tried. Serve over a bed of warm rice and you have a delicious meal.

Ingredients For jim's peanut butter chicken

  • 1 pkg
    breaded chicken (popcorn)
  • 10 oz
    mango nectar
  • 2 c
    diet lemon-lime soda
  • 1/2 tsp
    red pepper flakes
  • 2 Tbsp
    brown sugar, lightly packed
  • 1/4 c
    soy sauce
  • 1/8 c
    apple cider vinegar
  • 1/2 Tbsp
    garlic
  • 1/4 c
    peanut butter, smooth or crunchy
  • 2 Tbsp
    peanuts, dry roasted
  • water
  • cornstarch

How To Make jim's peanut butter chicken

  • Baking chicken nuggets in the oven on a sheet pan.

    Prepare chicken according to package directions. Set aside.
  • Bringing mango nectar and lemon-lime soda to a boil.

    Bring nectar and soda to a boil. Once boiling, add pepper flakes and brown sugar. Continue boiling until reduced by about half.
  • Pouring soy sauce into the saucepan.

    Reduce heat to a simmer. Add soy sauce, vinegar, and garlic.
  • Mixing in peanut butter.

    Add peanut butter; blend in until smooth. Add peanuts.
  • Adding a cornstarch slurry to the sauce.

    Mix water and cornstarch (about 2 tablespoons each). Bring sauce to high heat and add cornstarch mixture until sauce thickens.
  • A plate of Jim's peanut butter chicken served over rice.

    To serve, pour sauce over chicken. Goes well with rice.
