I often let this sit in the fridge for awhile and the lemon juice does not cook the chicken or affect it in my opinion. I have also done this with chicken breasts, cutlets and bone in chicken, just adjust your cooking time. This is a light tasting chicken. Also, for those of you following low carb diets, I often use sugar free honey, which I find at a local grocery store and also at Walmart. The recipe as is, is 10 g of carbs and has 11 grams of fat. I'm not sure where I orginally got this, but have been making it for years.

1Preheat oven to 375 degrees

2In a bowl, combine honey, lemon juice, garlic and pepper

3Coat chicken with honey mixture, arrange in baking dish. Bake for 40 minutes, until juices run clear.
