2boneless, skinless chicken breasts, lightly pounded

1 cheavy cream

1/3 tsphazelnut liqueur

1orange, sectioned, reserve juice
- ORANGE THYME SAUCE

1egg, lightly beaten with 1 teaspoon water

1/4 tspthyme

1/3 cbread crumbs, fresh

1/3 chazelnuts, coarsley chopped
- HAZELNUT CRUMB MIX

3 Tbspbutter

1 cflour, to dredge

How To Make hazelnut chicken with orange thyme cream

1Cut each chicken breast in half.

2Mix together hazelnut pieces, bread crumbs and thyme.

3Set aside.

4Prepare egg wash.

5Beat egg lightly with water, and add salt and pepper.

6Dredge chicken breasts in flour, dip into egg wash and coat with hazelnut crumb mixture.

7Shake off excess.

8Chill until ready to use.

9Melt butter in heavy pan.

10Over moderate heat, cook chicken breasts until golden brown on both sides, approximately 10 to 15 minutes.

11Add reserved orange juice, thyme, hazelnut liqueur, and heavy cream.

12Simmer gently, basting often, until chicken is barely cooked through and sauce has thickened slightly.

13Add orange sections and season to taste with salt and pepper.

14Remove chicken breasts from pan and pour sauce over them.
