On my quest to get more ribbons I pulled this from my early cooking days and revisited it today, it is just as good now as it was when I first started making it.

Ingredients For gayle's coffee braised chicken

  • 3-5 lb
    cubed chicken (i used a combo of dark and white meat, they both tasted great)
  • 2/3 c
    soy sauce (low sodium would be ok too)
  • 1/3 c
    strong coffee
  • 1 c
    sugar
  • 1 c
    water
  • 1 tsp
    fresh ginger
  • 2 clove
    minced or pressed garlic
  • 1/2 tsp
    red pepper flake (optional)
  • I LIKE MY LIQUID A LITTLE BIT THICK, IF YOU PREFER YOURS BROTHY SKIP THIS NEXT STEP BECAUSE IT IS OPTIONAL
  • 1/2 c
    water
  • 2 Tbsp
    corn starch

How To Make gayle's coffee braised chicken

    Add all ingredients (except the corn starch and 1/2 cup water that is for thickening later)into a large stock pot.

    Bring to a boil, reduce heat, cover and simmer over medium heat for 40 minutes WITHOUT STIRRING OR OPENING, just shake the pan once or twice during cooking.

    at 40 minutes if you are going to thicken the broth combine corn starch and cold water and slowly add to bubbling liquid stirring constantly. Let sit 5 minutes before serving.

    I used my rice cooker to cook the rice and in the steam basket in the rice cooker I steamed some broccoli to serve the chicken and sauce over.
