This chicken salad has a major advantage - you start with a rotisserie chicken from your grocery store. Can't say I remember where I got this. I have substituted dried cranberries for the cherries and it was just as tasty.

Ingredients For festive chicken salad

1rotisserie chicken, remove all the skin, dice meat 1/2

4 Tbspgreen onions, small dice

2 Tbspcelery, small dice

3 Tbspsun-dried cherries, soak in warm water til they have plumped up, then drain

2 Tbsppecans, toasted and finely chopped

2 Tbspfresh tarragon, minced

1 Tbspfresh rosemary, minced

2 Tbspfresh parsley, minced

1/3 cmayonnaise

freshly ground white pepper and salt to taste

1In a large bowl, add all the ingredients and still until the mixture is evenly coated with the mayonnaise.
