    (12 oz.) lean italin sausage (try chicken or turkey)
  • 1 can
    (150z.) butter beans, drained and rinsed
  • 1 jar
    your favorite pasta sauce or 2 jars
  • 10 oz
    potatoes, peeled and thin chopped
  • optional: serve with toasted sourdough and drizzle of olive oil. a garnish of watercress leaves is lovely, too!

    In a nonstick saucepan, lightly brown the sausage. add the remaining ingredients and cook over medium heat for 45 minutes, or until the potatoes are nice and tender.
