If you love chicken chili and you like it spicy, this is for you! Very spicy, that's why I serve these w/ huge corn muffins, lol.

Ingredients For chorizo-chicken chili

  • 3
    links, chorizo spanish sausage, cut into chunks
  • 2 Tbsp
    olive oil
  • 1-1/4 lb
    boneless, skinless chicken thighs, cut into 1"-pieces
  • 1
    sonion, dicedalt and pepper to taste
  • 2 Tbsp
    chili powder
  • 1 tsp
    ground cumin
  • 1
    28 oz can whole, peeled tomatoes
  • 1
    15 oz can black beans, drained
  • 1 tsp
    chipotle chili peppers in adobo sauce. chopped
  • sour cream, garnish
  • shredded mexican cheese, garnish

How To Make chorizo-chicken chili

    In food processor or blender, pulse sausage until it resembles ground meat. Heat oil in lg pot over med-high heat. Seaon chicken w/ salt and pepper.

    Cook chicken in batches until browned.remove chicken. Reduce heat to medium, add onions and sausage. Cook until onions are soft and meat is browned. Stir in chili powder, chili pepper in adobo sauce and cumin.

    Add tomatoes, breaking them up w/ a fork or spoon. Add chicken and 1/2 cup water. Bring to a simmer. reduce heat and cook, stirring occasioanlly for 20 mins. Srve w/ a sprinkling of cheese and a dollop of sour cream.
