Ingredients For chicken with fruit sauce

2 tspolive oil

1/4 tspdried thyme, crushed

2 tsphoney

1/4 cchicken broth

1/2 cwhite wine, dry

1 lggarlic clove, crushed

1/4 conion, minced

2 tsplemon juice

2pears, peeled and cored, thinly sliced

2 Tbspbutter
-
"just a pinch" of pepper
-
"just a pinch" of salt
-
4 lgchicken breasts, halves, boneless and skinless

1/2 cblueberries, fresh or frozen
How To Make chicken with fruit sauce

1In a large skillet, heat the olive oil over medium-high heat; add the chicken and saute four to five minutes on each side until cooked through.

2Remove from the pan and keep warm.

3Melt 1 tablespoon of the butter in the pan.

4Add the pears and 1 teaspoon of lemon juice; saute until barely tender, about two to three minutes - Remove from the pan and set aside.

5In the same pan, cook the onion and garlic for one minute; add the wine and broth.

6Add the honey and thyme; boil until thickened, three to four minutes.

7Return the pears to the pan and add the blueberries; heat through, about two minutes.

8Swirl in the remaining tablespoon of butter and teaspoon of lemon juice.

9Serve the sauce over the chicken.
