Ingredients For chicken in golden sauce

2 lbchicken breast halves, skinless and boneless

1 Tbsplemon juice

1/4 call purpose flour

1 tsppaprika

1 dashfreashly ground black pepper

3 Tbspbutter

1 clovegarlic, halved

1/2 cdry white wine
- GOLDEN SAUCE

1/4 cpan liquid
-
4egg yolks, beaten
-
1 tspsnipped parsley
-
1 tspsnipped chives
-
`1/8 tspground nutmeg

salt and pepper to taste

1/2 tsplemon juice
How To Make chicken in golden sauce

1Skin and split chicken; rub with lemon juice. Mix flour, paprika, pepper, and 1 tsp salt in a paper or plastic bag. Add 2 or 3 pieces of chicken at a time; shake to coat well.

2Heat butter and garlic in an electric skillet set at 300 F. Once heated; discard garlic.

3Cook chicken until golden on both side; add wine. Cover; reduce heat to 220 F. Simmer 20 minutes or until tender. Uncover; cook an additional 10 minutes or until liquid is reduced to 1/4 cup.

4Remove chicken and reserve 1/4 cup pan liquids. Keep chicken hot in oven

5In sauce pan, combine 1/4 cup pan liquids, 4 beaten egg yolks, 1 cup whipping cream, 1 Tbs each snipped parsley and chives, and 1 tsp ground nutmeg. Season with salt and pepper.

6Cook and stir on low until slightly thickened. Add 1/2 tsp lemon juice.

7Pour sauce over chicken and serve.
