Ingredients For chicken cheese enchilada black bean casserole

    cubed,cooked chicken
  • 2 can
    10oz. red enchilada sauce
  • 2 can
    black beans
  • 3 c
    coarsely crushed tortilla chips
  • 3 c
    mexican blend shredded cheese
  • 2 tsp
    sugar
  • 1 c
    salsa, chunky
  • 1 c
    green onion,chopped
  • 2/3 c
    tomato,diced

    In medium bowl, mix chicken, sugar, salsa, enchilada sauces and black beans Place tortilla chips in ungreased 9 x 13"glass baking dish. Top with chicken mixture. Sprinkle with onions, tomato and cheese.

    Preheat oven to 350 Bake 35 to 45 minutes or until hot and bubbly! Add a dollop of sour cream to individual serving if desired! Enjoy!
