Ingredients For chicken arugula and pasta toss

    arugula coarsley chopped
  • 7 lg
    plum tomatoes
  • 4 md
    boneless, skinless chicken breasts
  • 1/3 c
    red wine vinegar
  • 3
    shallots chopped fine
  • 2 Tbsp
    olive oil, extra virgin
  • 3 clove
    garlic, minced
  • salt and pepper to taste
  • 1 sm
    sweet green pepper diced
  • 6 oz
    bow-tie pasta, cooked and drained
  • 2 Tbsp
    chopped parsley
  • 1 c
    grated parmesan cheese

How To Make chicken arugula and pasta toss

    Blanch the tomatoes, peeled and coarsley chopped. chop green pepper...In large bowl combine arugula, pepper. shallots, chicken, vinegar, oil, garlic and tomatoes....let stand covered for 1 hour.

    Cook pasta til tender, drain and toss with above mixture. Sprinkle with cheese and parsley,,,serve warm.
