Ingredients For chicken and vegetable casseroles

1.5 czucchini, cut into 1/4 inch slices

1 smonion, thinly sliced and separated into rings

1 smtomato, cut in wedges

2 Tbspolives, pitted and sliced

2 Tbspparsley, fresh and chopped

1 Tbspbasil, fresh chopped

tspgarlic powder

1 mdchicken breasts, halves, boneless and skinless

1 tspbutter
How To Make chicken and vegetable casseroles

1In a large bowl stir together zucchini, onion, tomato, olives, parsley, basil and garlic powder.

2Divide evenly between 2 individual casseroles or au gratin dishes; top with a chicken breast half. Dot with butter.

3Sprinkle chicken breast halves with 1/8 teaspoon salt and 1/8 teaspoon pepper.

4Bake, covered, in a 350 oven about 40 minutes or until chicken is no longer pink.
