Ingredients For chicken and rice casserole

  • 2 c
    cooked brown rice
  • 2 c
    shredded cheddar cheese
  • 1-1/2 c
    chopped chicken breast
  • 1 can
    evaported milk (8 ozs.)
  • 1/2 c
    finely chopped onion
  • 2 lg
    eggs slightly beaten
  • 1/4 c
    chives or parsley
  • 2 Tbsp
    melted butter
  • salt and pepper to taste

How To Make chicken and rice casserole

  • 1
    Preheat oven 350 degrees. Lightly spray (with cooking spray) a casserole dish (2 quart).

    Put all the ingredients into the 2 quart casserole. Mix well. If desired at this time, you could add bread crumbs or finely grated cheese.

    Bake 45 minutes or until tester comes out clean.
