Super simple... a bit of crunch... and really tasty! We love just about anything herb-crusted, so why not spice up some chicken with Cajun seasoning and add a little crust! You can easily change up the cheese to use a more flavorful type, like parmesan or Gruyere. I picked mozzarella for this recipe because it's one of those cheeses that you have often in the fridge. Serve this dish with our Dijon potatoes and fresh green (organic) veggies. Enjoy!

Ingredients For cajun-spice crusted chicken breasts

    boneless, skinless chicken breasts, organic or natural
  • 4-5 Tbsp
    mayonnaise
  • cajun seasoning
  • 1 c
    mozzarella cheese, shredded
  • 2/3 c
    seasoned bread crumbs, organic
  • 4 Tbsp
    butter, melted, organic

How To Make cajun-spice crusted chicken breasts

    Preheat oven to 350 degrees. Place chicken breasts in glass baking dish. Spread mayonnaise evenly over chicken breasts and generously sprinkle with Cajun seasoning.

    Add the seasoned bread crumbs to the melted butter and mix with a fork to make the crusted topping.

    Sprinkle two-thirds of the mozzarella cheese over chicken breasts. Gently spread the bread crumb mixture evenly over the cheese-topped chicken.

    Sprinkle the remaining mozzarella on top of the bread crumb mixture and place baking dish in oven. Bake at 350 for 45-50 minutes, depending on thickness of chicken breasts. Chicken is done when it is no longer pink inside and juices run clear.
