balsamic chicken - crock pot

Found this on CrockPot Girls and made some modifications. Turned out great! It can make A LOT! They originally called for Angel Hair Pasta, but I thought it tasted better with couscous. The pasta overpowered it a little.

Ingredients For balsamic chicken - crock pot

  • 4-6
    boneless, skinless, chicken breasts
  • 2 can
    14.5oz fire roasted diced tomatoes
  • 4 clove
    garlic
  • 1
    onion sliced thinly (not chopped)
  • 1/2 c
    balsamic vinegar
  • 2 Tbsp
    olive oil
  • 1 tsp
    dried oregano
  • 2 Tbsp
    fresh basil
  • 1 tsp
    rosemary
  • 1/2 tsp
    thyme
  • salt and pepper to taste

How To Make balsamic chicken - crock pot

  • 1
    Pour olive oil on bottom of crock pot. Place chicken breasts on bottom and salt and pepper to taste. (We don't use salt in our house so we always forgo this)

    Pour seasonings and garlic cloves on top of chicken.

    Place sliced onion on top of chicken.

    Pour in vinegar. Top with Tomatoes. (For more juice/sauce, don't drain cans of tomatoes).

    Cook on high for 4 hours.
  • 6
    Serve over couscous.
