This is a nice, tasty non-macaroni Mac and cheese casserole. Very flavorful and my kids loved it.

Ingredients For loaded cauliflower (mac) and cheese

  • 4 c
    cauliflower, cooked
  • CHEESE SAUCE
  • 4 oz
    cream cheese
  • 3 Tbsp
    butter
  • 1/3 c
    low-carb milk or whipping cream
  • 1 Tbsp
    water
  • 1/4 tsp
    salt
  • 1/8 tsp
    white pepper
  • 2/3 c
    shredded monterey or cheddar cheese
  • TOPPING
  • 2/3 c
    grated sharp cheddar cheese
  • 4 slice
    cooked bacon, chopped
  • 2 Tbsp
    chopped, fresh parsley

How To Make loaded cauliflower (mac) and cheese

    Cheese Sauce: In nonstick pan, combine cream cheese, butter, milk, water, salt and white pepper. Whisk occasionally. Stir in Cheddar cheese until it melts and sauce is smooth. Add extra water if necessary 1 tablespoon at a time. ***Cheese sauce can be poured over cooked broccoli or cauliflower for a side dish. You can double the recipe very easily.

    Chop Cauliflower into smaller pieces, but not too small. In large bowl, combine cauliflower and Cheese Sauce. Place mixture in 2 qt. shallow casserole dish.

    Topping: In small bowl combine 2/3 cup grated cheddar cheese, bacon and parsley. Sprinkle over the top of the cauliflower.

    Bake at 350 degrees about 15 minutes or until slightly browned and bubbly. You could put the casserole under the broiler for 2 minutes to brown the cauliflower a little more.
