The use of a cast iron is key with this recipe. You want the pan to be hot enough to sear in all the flavor and juices but not so hot it burns the oil. I prefer a more medium well burger so the time in the oven is key for my personal preferences, you can skip the oven time if you prefer a more rare finish. This burger pairs beautifully with my chili fries recipe.

Ingredients For mum's burgers

  • 2 lb
    ground beef (93% lean, although higher fat does increase flavor)
  • 2
    eggs
  • 1 c
    minced onion
  • 1/2 c
    breadcrumbs
  • 2 Tbsp
    worcestershire sauce
  • 2 clove
    garlic, minced
  • 1 tsp
    salt
  • 1/2 tsp
    pepper

How To Make mum's burgers

    I recommend using a cast iron skillet for this recipe. Because I have a large family, I use two at the same time. Heat skillets in a 350 degree oven. Put them in the oven to heat while you put together the patties.

    Mix together all ingredients, use your fingers to mix together. Form six patties.

    Take skillets from oven and place on medium high heat stove top, add olive oil and 2-3 patties per pan (do not crowd the pan). If the pan smokes when you add the oil, your skillet is too hot. Heat for 3-4 minutes, flip, heat for 3-4 more minutes, put the skillets with patties back in the oven. Heat in oven 4-5 minutes. (Less time for medium cook, more time for medium well).
