linnie's fiesta burgers

This is one of my husband's favorite dishes and I've been making this for about 45 years. I usually use a creamy chees like Velveeta but a white Mexican cheese would be good, too. It makes for a great sauce! If you don't like green peppers you can also use a can of mild green chilies. I usually serve this with Mexican or Spanish rice and buttered corn niblets. I hope you enjoy this and that your family does, too!

Ingredients For linnie's fiesta burgers

  • 1 1/2 lb
    fresh ground beef
  • 2
    eggs beaten
  • 1/2
    finely chopped onion
  • 1 pkg
    crushed ritz crackers
  • 1/4 c
    each of ketchup & brown sugar
  • 2 tsp
    worcestershire sauce
  • 1/2 c
    diced greep pepper
  • 1 c
    shredded cheese
  • 2 can
    cream of mushroom soup
  • can
    pinto beans or kidney beans
  • 1/4 tsp
    salt and pepper

How To Make linnie's fiesta burgers

    Prepare the hamburger patties by mixing together the eggs, crushed crackers, ketchup, Worcestershire sauce, onions, brown sugar, salt and pepper. Make six patties. Brown the meat in a skillet over medium heat and check the bottoms often because they can burn easily since they contain brown sugar and ketchup.

    After they are browned on both sides, pour the mushroom soup over the burgers. Make sure the soup gets underneath the patties. Then sprinkle the pinto beans and green pepper over the top. Cover with a lid and let them simmer for about ten minutes over low heat.

    Sprinkle grated cheese over the top, cover it again and let it cook over low heat another five minutes until the cheese is melted. Then serve it up!
