Uncle Alphonso Stegall was my mother, Lucille’s, youngest Uncle. He was raised on a West Texas Ranch in the early 1900's. He joined the Navy and was a cook during WW1. After the military he worked the rest of his life as a cook. He would come to visit us occasionally and held us spellbound with his adventurous stories. He would make this recipe for us children. Mom said he first made it for us with chipped beef and we didn’t like it so he replaced the chipped beef with hamburger meat and we loved it.

Ingredients For uncle al's sos

  • 1 lb
    hamburger meat
  • 1 md
    onion (chopped)
  • 4 Tbsp
    lard or crisco
  • 4 Tbsp
    flour
  • 4 c
    milk
  • 4 c
    cooked rice
  • salt and pepper to taste

How To Make uncle al's sos

    On medium heat, brown hamburger meat with the onion in a skillet. In another skillet, add the lard and heat on medium high heat. Add the flour and stirring constantly, cook until the mixture is lightly browned, being careful not to burn the mixture. Add the milk and continue to stir constantly until the gravy is thickened. Salt and pepper the gravy to taste and add the hamburger meat. Spoon the mixture over rice. Note: If the mixture is too thick, add a little milk to thin slightly. Sometimes we would have this for breakfast and spoon the mixture over biscuits.
