I've seen a lot of taco soup recipes, but I came up with this one spur of the moment. I don't even make chili anymore because it's just as easy to do this! We eat this with a dollop of sour cream on top and tortilla chips.

Ingredients For taco soup

  • 1 lb
    ground turkey/lean beef
  • 1 can
    tomato sauce
  • 1 can
    diced tomatoes
  • 1 can
    black beans (drained, rinsed)
  • 1 can
    pinto beans
  • 16 oz
    corn (canned or frozen)
  • 1 pkg
    taco seasoning mix
  • 1/2 c
    green bell pepper, chopped
  • 1/2 c
    onion, chopped
  • 1 can
    nacho fiesta cheese soup (optional)
  • sour cream
  • tortilla chips

How To Make taco soup

  • 1
    In pot, brown meat with green peppers and onions.
  • 2
    When meat is browned, add the rest of the ingredients. Bring to a boil.

    Reduce heat to medium/low and simmer, covered, for 20 minutes, or longer if desired.

    Serve with sour cream and tortilla chips.
