swedish meatballs

This one is always a hit with freinds and family. This comes from my mother and is very easy and quick. I have even made the recipe in bulk. I freeze the meatballs and place them in ziplocks and in a separate bag the vegetables with butter and then the soups in another bag and placed them together in "kits". I will do several of these at once and for a quick and easy meal to keep on hand.

Ingredients For swedish meatballs

  • 1 Tbsp
    butter, cold
  • 1
    green pepper-chopped
  • 1 md
    onion - chopped
  • 1 can
    chicken and rice soup
  • 1 can
    tomato soup
  • 1 c
    chicken broth
  • 1 lb
    hamburger
  • 2 slice
    bread
  • 1/4 c
    evaporated milk
  • 1
    egg

How To Make swedish meatballs

  • 1
    Melt in skillet: butter, green pepper and onion. Saute until tender. Stir in soups and broth. Heat mixture to boiling point and then decrease to simmer while you make the meatballs. Mix hamburger, bread, milk and egg. Shape into ping pong size balls and drop into sauce. Cook for 1 hour or until sauce thickens. Serve with rice or noodles.
