This is a quick n yummy recipe handed down to me from my hubby's grandmother, fondly refered to as Ma! She was a great cook and specialized in cooking for large crowds of family cowboys. Hope u enjoy it as much as we do! Could be called something else, not sure, so I named it squash medley for lack of something better. Open to suggestions though! =)

Ingredients For squash medley

  • 1 - 1 1/2 lb
    lean ground beef
  • 1 md
    white/yellow onion
  • 1 clove
    garlic
  • 1 can
    diced tomatoes, i use any brand, rotels work good or even fresh if you have them on hand.
  • 1 can
    tomatoe sauce
  • 1 c
    water
  • 2
    green zuchinis, or one green, n one yellow
  • salt and pepper to taste

How To Make squash medley

    Cook ground beef throughly, drain off any remaining fat, I start with lean beef. Add tomatoe sauce and one cup of water, to allow for simmering, add onion, garlic and diced tomatoes,cover and let simmer for approximately 20-30 minutes, taste, add salt and pepper and zuchini recover and let simmer an additional 15 minutes or until zuchini softens and enjoy!

    I usually mix up a couple boxes of jiffy cornbread and serve with this. Quick, easy and yummy!

    This recipe can be altered to you liking, jalpeno's can be added for a spicy flare, or even bell pepper. Celery can be added or even corn, and I've even thought about adding beef broth in the winter and adding some salad pasta for a soup like dish.
