pâte chinois (quebec's sheperd's pie)

This is the French Canadian version of Sheperd's pie. Quebecois opinions vary on the way their Sheperd's pie should be prepared, some prefer it prepared with "old" while others prefer it with "new". "Old" means it's prepared with leftover cooked beef and "new" means it's prepared with fresh ground beef. From Traditional Quebec Cooking by Micheline-Mongrain-Dontigny.

Ingredients For pâte chinois (quebec's sheperd's pie)

  • 2 c
    leftover cooked beef with cooking juice (or 1 lb. ground beef)
  • 1 14-oz can
    creamed corn
  • 3 c
    mashed potatoes
  • paprika

How To Make pâte chinois (quebec's sheperd's pie)

    If using leftover beef, grind and mix with cooking juice. If using ground beef, saute in oil or butter.

    Place meat in an oven casserole, cover with creamed corn and finish with mashed potatoes.

    Sprinkle with paprika.

    Bake for about 45 minutes at 350°F (175°C).

    Serve with homemade ketchup and pickles.
