Meat loaf is a comfort food. One of those meals you make when you are all out of other ideas, but you know you will enjoy it :) This is my Mum's basic way of making meat loaf. The only thing I change is to add some Caribbean seasoning I've come to enjoy and instead of using regular bread crumbs, I use Panko bread crumbs. Otherwise, it's Mum's. The guys like it well done. I prepared this the night before. We had a change of dinner plans and I had thawed ground beef. I just covered it with plastic wrap, put it in the fridge and had my next day's meal ready to go.

Ingredients For mum's meat loaf

  • 2 lb
    lean ground beef
  • 1 can
    condensed tomato soup
  • salt & pepper
  • worstershire sauce
  • caribbean seasoning (optional)
  • 1 md
    onion, diced
  • 1/4 - 1/2 c
    panko bread crumbs (or regular bread crumbs)

How To Make mum's meat loaf

    In a bowl, combine ground beef and tomato soup and onion. Mix through.

    Add several shakes of salt and pepper, worstershire sauce and Caribbean seasoning. Mix through.

    Add Panko last and mix through.

    Put the meat mix into an ungreased loaf pan. Bake at 350F for 2 hours.

    After 45 mins to 1 hour, remove loaf pan from oven and drain any fat. The loaf WILL shrink. I have a large empty coffee can I use for this. Just hold the pan using oven mitts and tilt the pan to allow the fat to run out one corner into the grease can. Return loaf pan to oven. Check in another 45 mins and drain any more fat that has accumulated.

    When done, remove from oven and drain any remaining fat. Put loaf on a plate, slice and serve with your chosen side. We're not a sit-down dinner family, so I just slice it in the loaf pan and the guys serve themselves.
