My nephew Mikey, came home from prep school and wanted to make Shepherd's Pie - something he had at school. Everyone loved it and we've kept making it since.

Ingredients For mikey's shepherd's pie

  • 1 1/2 lb
    lean ground beef
  • 1 md
    onion, chopped
  • 1 pkg
    frozen peas and carrots
  • 2-3 lb
    potatoes, peeled and cubed
  • 8 Tbsp
    butter
  • 1/2 c
    beef broth
  • 1 Tbsp
    worcestershire sauce
  • salt and pepper
  • shredded cheddar, optional

How To Make mikey's shepherd's pie

    Peel and dice potatoes. Boil in salted water until tender (about 20 minutes). While potatoes are cooking, melt 4 tbsp butter in large skillet.

    Saute chopped onions in butter until tender over medium heat (10 minutes). Add ground beef and saute until no longer pink and the meat has browned. Season with salt and pepper. Add worcesterchire sauce and beef broth. Add frozen vegetables and cook over low heat, uncovered for 10 minutes. **Add more beef broth if mixture becomes dry.

    Mash potatoes in bowl with remainder of butter, season with salt and pepper. Place beef mixture in a 9 x 12 rectangular baking dish. Put mashed potatoes over top. Rough up with a fork so peaks will brown easily. Top with shredded cheddar if desired.

    Bake in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown top. This is a recipe you can change as you wish. Add more ground beef, add frozen corn, etc. Make it your own. We even used leftover filet mignon when we made it once and cut the beef up into small pieces. It was fantastic.
