This is my entry for the Sandwiches, Sammiches & Sammies for the wk ending July 1, 2011. The ingredients given were hot sauce and red leaf lettuce, with roasted red peppers as an additional option. I thought alot about this before making it, wanted to incorporate all the requirements and more...this is what I came up with! My husband, who is my chief tester and judge, gave it five stars... It's not a fancy sammie, but has a great taste with a little tang! Hope you will give it a try and let me know your opinion! Enjoy!

Ingredients For hot & spicy meatball wraps

  • 1 lb
    ground chuck
  • 1 tsp
    minced onion
  • 1 tsp
    cumin
  • 1 tsp
    mrs. dash garlic & herb seasoning
  • 1
    egg
  • 3/4 c
    bread crumbs, seasoned
  • 1 Tbsp
    olive oil
  • 1/2
    green pepper, diced fine
  • 1/2
    red pepper, diced fine
  • 1/2
    yellow pepper, diced fine
  • 1 md
    tomato, seeded & diced fine
  • 1 Tbsp
    frank's hot sauce
  • 1/2 c
    kraft mayonnaise w/olive oil
  • 1 Tbsp
    heinz ketcup
  • 1 Tbsp
    french's mustard
  • red leaf lettuce
  • 1/2 c
    shredded mozzarella cheese
  • 4
    10" flour tortillas

How To Make hot & spicy meatball wraps

    In large bowl, combine meat, onion, cumin, Mrs. Dash, egg and bread crumbs. Mix well to combine. Form mixture into 12 meatballs about 1-1/2" round. Bake in casserole dish @ 350°F for about 15-20 minutes, or until completely cooked. Take out and drain on paper toweling to absorb any grease.
  • Peppers & tomatoes

    While meatballs are cooking, put all the peppers and tomato in small skillet with oil and cook over medium heat, covered, until tender.
  • Sauce

    In medium bowl, combine sauce ingredients: mayonnaise, ketchup, mustard and hot sauce. Blend well until combined.

    Heat the tortillas in microwave, on paper plate covered w/damp paper towelling, for about 10-15 seconds on low power to warm and make them pliable.
  • First layer - sauce

    Using spoon, spread sauce on center portion of tortillas, keep it 2-3' from edges. Layer lettuce, then pepper/tomato mixture, 3 meatballs (keep close together), and top with 1/4 of shredded cheese.
  • After baking

    Roll up fairly tight, folding in ends and then put edge side down on baking sheet. Bake @ 350°F for about 7-10 minutes, until wrap starts to crisp up. This also ensures the cheese melts.
  • Cut & Ready to Eat!

    Put wraps on plates, cut in half and enjoy.
