Ingredients For fruited pot roast

  • 3 / 4 lb
    beef pot roast
  • 2 Tbsp
    shortening
  • 2 c
    cubed potatoes
  • 1/2 c
    chopped onion
  • 1 c
    chopped carrots ( or more if desired )
  • 1/2 c
    red burgundy
  • 1 clove
    garlic ( minced )
  • 11 oz
    package mixed dried fruit ( 1 3/4 cups )
  • 3 Tbsp
    all purpose flour
  • 1 `1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • hot / cold water

How To Make fruited pot roast

    Trim excess fat from roast. In Dutch oven or large skillet, brown meat on all sides in hot shortening. Season with salt and pepper.

    Add potatoes, onion, carrots, burgundy, and garlic. Cover and cook over low heat for 1 1/2 hours.

    Meanwhile, pour 1 1/2 cups hot water over fruit; let stand 1 hour. Drain fruit, reserving liquid. Place fruit on meat. Cover; cook 45 minutes more.

    Remove meat, vegetables, and fruit to platter. Skim fat from pan juices. Add reserved liquid to juices to make 1 1/2 cups. Blend flour and 1/3 cup cold water; stir into liquid. cook and stir till thick and bubbly.

    Pour gravy mixture over meat.
