I wanted to do something besides the same old dry black eyed peas for new years so I made this. Not sure where I got the recipe but it sure was good. My husband loved it.

Ingredients For black eyed pea casserole

  • 1 box
    uncle bens long grain and wild rice mix
  • 1 lb
    ground beef
  • 1 md
    onion, chopped
  • 1 md
    bell pepper, chopped
  • 2 can
    (15 1/2 oz) black eyed peas with jalapenos, rinsed and drained
  • 1 can
    (10 3/4 oz) cream of mushroom soup
  • cheddar cheese, shredded

How To Make black eyed pea casserole

    Cook the ground beef, onion, and bell peppers over medium heat until meat is no longer pink; drain and set aside.

    Cook wild rice mix according to package directions.

    Combine the beef mixture with the wild rice, soup, and peas. Pour into a greased 2 1/2 quart baking dish.

    Cover and bake at 350* for 25 minutes or until heated all the way through. Uncover and sprinkle with cheese. Bake 5 more minutes so the cheese will melt on top.
