I used to hate meatloaf as a kid. Probably because the kind my Mom made had no flavor and the edges always seemed to be burned. Ha ha. My Dad decided to learn how to cook and experiment in the kitchen so that we wouldn't starve. LOL. Since then he has become a great cook and he always likes to come up with new recipes or modify ingredients in recipes that he finds in cookbooks and magazines. This recipe is one that he shared with me. Enjoy. I call this birthday meatloaf because it's now a favorite meal of mine and I always request it on my birthday!

Ingredients For birthday meatloaf

  • 3 Tbsp
    butter
  • 1
    small yellow onion, chopped
  • 1/2
    bunch green onions, chopped
  • 1/4 c
    celery, chopped
  • 2 tsp
    garlic, minced
  • 1/2 c
    ketchup
  • 1/2 c
    half and half
  • 3
    eggs, well beaten
  • 1/4 tsp
    ground cumin
  • 1/2 tsp
    nutmeg
  • 1/4 tsp
    cayenne pepper
  • salt and pepper to taste
  • 2 lb
    lean ground beef chuck
  • 12 oz
    ground sausage
  • 3/4 c
    panko crumbs

How To Make birthday meatloaf

    Melt butter in a heavy skillet and add onions, celery and garlic. Stir often until moisture from the veggies has evaporated(about 10 min). Set mixture aside to cool. Cover and refrigerate until chilled (at least 1 hour).

    In a mixing bowl, beat together the eggs, ketchup, half and half, cumin, nutmeg, cayenne and salt and pepper. Add the ground beef, sausage and panko crumbs. Add chilled veggies and mix thoroughly with your hands, kneading for 5 minutes. Preheat oven to 350 degrees.

    Form meat mixture into a loaf, approximately 12x5x2 1/2 inches, on a baking sheet. Bake until cooked through(or 160 degrees on a meat thermometer), about 1 hour. Remove from oven. Let rest for 20 minutes before slicing.
