Betty Lou Gallardo Anderson, the 4th child, and youngest daughter of Lucille Rodgers is known as “the baby” to her family and was “little bit,” to her school friends. Betty was taught to cook by her mother. She was 1st runner up to Miss Texas in 1967, and World Rattlesnake Racing Champion in 1976 and as of yet her time record has not been broke. Betty is a grandmother to 6 girls and 1 boy. She has made her home in Marshall Texas with her husband Rick for the past 23 years. Betty says, "if you just do not want to, or, do not have the time to make homemade dumplings, this recipe is for you."

Ingredients For betty lou's lazy chicken and dumplings

    4lb. chicken
  • 1 md
    onion, chopped
  • 2 tsp
    dried parsley flakes
  • 1 tsp
    garlic powder
  • water to cover chicken by at least 2 inches
  • 4-6 can
    biscuits
  • salt and pepper to taste

How To Make betty lou's lazy chicken and dumplings

    Put the chicken pieces in a large pan. Add water until the water is 2 to 3 inches above the chicken. Add the spices and the onion. Turn burner to medium high heat until water begins to boil. Turn heat down to medium and cook until chicken is tender, about 45 minutes to 1 hour. Remove the chicken, cool, and debone. Put the chicken back into the pot of broth. Open the cans of biscuits and pinch any size pieces you like of each biscuit. Bring the broth and chicken to a medium boil and drop the pieces of biscuits into the broth. Place a lid on the pot and turn the heat down to a simmer and continue cooking 30 minutes until biscuits are cooked.
