1 lgbeef roast; i used a good lean chuck roast with a little marbeling

1Rub meat with seasonings. Place in heavy covered pot and cook on 325 degrees for about 2 1/2 to 3 hours. If water gets too low, add a lttle more. Will be moist and tender.
