I have tried many different recipes for beef enchiladas...And this one is the one. I have made a few changes to it. So Yummy with a little kick.

Ingredients For beef enchiladas

  • 1 lb
    lean ground beef
  • 1/2 pkg
    mccormicks taco seasoning
  • 1/2 c
    finely chopped onion (if you don't like raw onions,you can cook them with the meat)
  • 2 c
    cheddar cheese, shredded
  • 1 can
    red enchilada sauce (mild)
  • 1 can
    green enchilada sauce
  • 1 can
    ro-tel tomatoes (original) pureed in blender
  • 1 can
    cream of mushroom soup
  • 1 can
    cream of chicken soup
  • 1 pkg
    corn or flour tortillas (i use corn)

How To Make beef enchiladas

    Brown ground beef. Add taco seasoning and mix well. In a medium saucepan mix together both enchilada sauces, both soups and pureed ro-tel. Mix thoroughly and heat until hot, but not boiling.

    Heat tortillas in a skillet sprayed with cooking spray for 10 sec. on each side. Put 1 tablespoon of meat, a sprinkle of cheese, and a few chopped onions on each tortilla. Roll up and place seam side down in a greased 9x13 baking pan. Continue till all the meat is gone.

    Pour heated sauce over all the enchiladas. Sprinkle with grated cheese. Bake at 350 for 20 miniutes.
