I have tried many different recipes for beef enchiladas...And this one is the one. I have made a few changes to it. So Yummy with a little kick.

Ingredients For beef enchiladas

1 lblean ground beef

1/2 pkgmccormicks taco seasoning
-
1/2 cfinely chopped onion (if you don't like raw onions,you can cook them with the meat)

2 ccheddar cheese, shredded
-
1 canred enchilada sauce (mild)

1 cangreen enchilada sauce
-
1 canro-tel tomatoes (original) pureed in blender
-
1 cancream of mushroom soup
-
1 cancream of chicken soup
-
1 pkgcorn or flour tortillas (i use corn)
How To Make beef enchiladas

1Brown ground beef. Add taco seasoning and mix well. In a medium saucepan mix together both enchilada sauces, both soups and pureed ro-tel. Mix thoroughly and heat until hot, but not boiling.

2Heat tortillas in a skillet sprayed with cooking spray for 10 sec. on each side. Put 1 tablespoon of meat, a sprinkle of cheese, and a few chopped onions on each tortilla. Roll up and place seam side down in a greased 9x13 baking pan. Continue till all the meat is gone.

3Pour heated sauce over all the enchiladas. Sprinkle with grated cheese. Bake at 350 for 20 miniutes.
