My grandma, whom I called Anmama, cooked this and made some good cornbread to go with it. It was always a treat to eat this at her house.

Ingredients For anmama's vegetable-beef gumbo

  • 1 pkg
    frozen corn
  • 2 can
    stewed tomatoes
  • 1/2 bottle
    v-8 juice
  • 1 lb
    ground beef
  • 1 can
    drained baby lima beans or use frozen ones
  • 2 tsp
    salt or to taste
  • 1 pkg
    frozen chopped okra
  • 1 tsp
    ground black pepper or to taste

How To Make anmama's vegetable-beef gumbo

  • 1
    Brown the ground beef in a frying pan until it is no longer pink. Salt and pepper it to taste. Drain and put the drained meat into a dutch oven (large pot).

    Add to the dutch oven with the meat the remainder of the ingredients and cook on stovetop until it begins to boil, stirring often.

    Turn the eye to low, add more salt and pepper to taste and add some water if it thickens too much. It should cook for approximately 30 minutes with you stirring often and adding water as needed.

    Serve in bowls with a slice of home-made cornbread and enjoy!
