Created this recipe while looking in the cupboard for something to make for supper. Kinda of took a basic stir fry recipe and reworked it.

Ingredients For albacore tuna stir-fry

  • 12 oz
    tuna, packed in water (albacore solid tuna)
  • 1 3/8 Tbsp
    soy sauce, low sodium
  • 1
    lemon ( 2 tablespoons juice)
  • 2 Tbsp
    canola oil
  • 1/2 c
    onions sliced
  • 1/2 c
    carrots sliced
  • 1 c
    broccoli florets
  • 8 oz
    pea pods
  • 3 stalk
    celery sliced
  • pinch
    red pepper flakes
  • 1/2 tsp
    black pepper

How To Make albacore tuna stir-fry

    In a small bowl add the tuna and flake with a fork.Squeeze half a lemon over tuna or 1 tablespoon of lemon juice and sprinkle with black pepper to taste. Toss to combine lemon juice and pepper with tuna.

    In another small bowl add soy sauce, 1 tablespoon of water and squeeze the other half of the lemon or 1 tablespoon of lemon juice into the soy sauce mixture, mix completely and set aside.

    Heat a fry pan with oil and crushed red pepper over medium high heat.Stir the oil to keep the pepper from burning.

    Once the oil is hot add the carrots stir fry 1 minutes, add celery and continue to cook for 2 more minutes, add pea pods, onion and broccoli stir fry for 4 more minutes.

    Add the tuna and sauce, stir fry for 1- 2 minutes till all the tuna is hot. Serve over rice.
