There are countless variations of this traditional Russian mulled honey drink. Sbiten has a long history dating back at least to the 12th century. '...Served warm, sbiten is similar to mulled cider. It is frequently served from copper samovars and is usually prepared without alcohol, but certainly is delicious with vodka (bourbon or cognac) added just before serving.' From Associated Press and other online sources with a few of my own additions and changes. Note: A variety of jam flavors can be substituted: raspberry, boysenberry, blueberry, loganberry, marionberry, etc.

Ingredients For sbiten

1/2 choney (good quality)

12 ozblackberry or currant jam (i used huckleberry jam)

2whole cinnamon sticks

1bay leaf (fresh if possible!)

1/2 Tbspwhole allspice

1/2 Tbspwhole cloves

1 tspdried mint
-
1/2 tspground ginger
-
1/4 tspcardamom (ground or crushed whole seeds)

pinchsalt
-
7 cwater
How To Make sbiten

1Combine all ingredients in a large saucepan over medium heat. Bring to a simmer and cover. Simmer for 30 minutes. Strain through a fine mesh sieve, pour into a mug or tea cup and serve warm.
