Not sweet, not even red, it has a bitter quality that nicely balances some of the sweeter ingredients rum embraces. Ingredients For tall tahitian

  • 1/3 cup unsweetened pineapple juice
  • 2 ounces white, gold, or coconut flavored rum
  • 1 1/2 teaspoons superfine sugar
  • 1 1/2 teaspoons curaçao or other orange liqueur
  • 1 1/2 teaspoons maraschino
  • club soda
  • a wedge of lime
  • maraschino cherry, as garnish

    in a glass, mix the juice, rum, sugar, Curaçao, and maraschino. Stir to dissolve the sugar.

    Fill the glass about three quarters full with ice and stir to chill. Add a splash of soda, don't drown the drink, squeeze the lime into the glass and discard, garnish with a cherry, and serve at once. Makes one cocktail
