While growing up, I spent a LOT of time at my Grandma's house (Saturday night was my parent's date night). And Gram made all kinds of different foods, lunch, supper, and breakfast. One of my favorite's was cornstarch pudding. But, she wouldn't show me how (and I was a cooking-idiot, so it was no wonder), and she wouldn't give me the recipe (because she didn't know it anymore, she just poured and whisked and added by sight). When she died, I feared that that was the end of my favorite food. . . Then I found a cookbook at my library, Back of the Box Gourmet -- and it had the recipe!

Ingredients For easy vanilla pudding

  • 1/3 c
    sugar
  • 1/4 c
    cornstarch
  • 1/8 tsp
    salt
  • 2 3/4 c
    milk
  • 2 Tbsp
    butter
  • 1 tsp
    vanilla extract

How To Make easy vanilla pudding

    In a 2-quart saucepan, stir sugar, cornstarch, and salt. Gradually stir in milk until smooth. Stirring constantly, bring to a boil over medium heat and boil 1 minute. Remove from heat. Stir in butter and vanilla. Pour into serving dish or individual dishes. Cover; refrigerate. makes about 2-1/2 cups.

    Alternatives: Bittersweet Chocolate -- Add one square unsweetened chocolate, broken in pieces, with milk. Butterscotch -- substitute 1/2 cup firmly packed brown sugar for sugar.
