This is one of Russia's most popular desserts and is even considered a main dish at times. In Russia they serve this with vanilla sugar--granulated sugar that has been kept a few days in a jar with a piece of vanilla-bean pod buried in the sugar. Ingredients For drachena (russian cottage pudding)

  • 3 Tbsp
    butter
  • 3
    egg yolks
  • 1/3 c
    confectioners' sugar (powdered)
  • 1/2 tsp
    salt
  • 2 c
    all purpose flour
  • 2 c
    milk

How To Make drachena (russian cottage pudding)

    In a large bowl, cream 2 Tbsp. of the butter until white. In another bowl mix the egg yolks and confectioners' sugar (do not use granulated!). Stir until the sugar and eggs are white.

    Combine the butter with the sugar-and-egg mixture. Add the salt. Add the flour in gradually, adding milk as you go. Beat thoroughly. The batter should be medium thick, depending on the type of flour. You may need a little less than 2 cups of milk.

    In a heavy pan heat the remaining Tbsp. of butter, but don't let it bubble. Pour in the batter. Bake in a preheated 400-degree oven for 10 minutes. Lower heat to 350 degrees and continue baking for 20 minutes more.
