This recipe is so easy to make and makes enough for 2 pies. Good thing because my honey eats one all by himself! Great for holidays and family get-togethers.Delicious topped with meringue or marshmallows.Enjoy!

Ingredients For sweet potato pie

    9 in. deep dish pie shells
  • 3 1/2 c
    cooked and mashed sweet potatoes
  • 1 c
    sugar
  • 1 stick
    butter,softened
  • 1/2 c
    sweetened condensed milk- not evaporated milk
  • 2 lg
    eggs,slightly beaten
  • 1 1/2 tsp
    ground cinnamon
  • 1/4 tsp
    ground nutmeg or to taste
  • 1 tsp
    vanilla extract

How To Make sweet potato pie

    Preheat oven to 375 degrees: Wash and pierce with a fork about 4-5 large sweet potatoes.Bake potatoes on a foil lined cookie sheet about 1 hour or until fork tender.Cool,peel and mash. Lower oven temp. to 350 degrees: In a large bowl add all ingredients and mix well with an electric hand mixer. Divide mixture evenly into pie shells and bake for about 30-45 minutes or until center is set.*TIP*--If pie shells start to get too brown,place a large enough piece of aluminum foil over pies to completely cover. These are wonderful topped with meringue or marshmallows. After pie is done,set aside to cool on a wire rack for about 20 minutes. For meringue:Beat 5 large egg whites with an electric mixer until frothy. Gradually add in 1/3-1/2 cup confectioner's sugar (depending on how sweet you like your meringue) and continue beating until stiff peaks form. Spread over cooled pies,sealing meringue to edges of pie and bake at 350 degrees for 10-15 minutes or until lightly browned.If using marshmallows,pile marshmallows all over top of pie and bake as instructed above.
