Ingredients For rhubarb cream delight

  • CRUST INGREDIENTS
  • 1 c
    all purpose flour
  • 1/2 c
    butter, cold, cut into small chunks
  • 1/4 c
    sugar
  • RHUBARB FILLING
  • 1 Tbsp
    all purpose flour
  • 1/2 c
    sugar
  • 3 c
    fresh rhubarb, cut into 1/2 inch pieces
  • CREAM LAYER
  • 1/2 c
    sugar
  • 12 oz
    cream cheese (softened)
  • 2
    eggs
  • 1 tsp
    vanilla

How To Make rhubarb cream delight

    Crust: Mix flour, sugar, and butter, just until a dough forms. Pat into a 10 inch pie plate. Set aside

    Rhubarb Layer: Combine rhubarb, sugar, and flour. Toss lightly and pour into crust. Bake at 375 F for 15 minutes. Remove from oven. Lower oven heat to 350 F.

    Cream Layer: (Prepare while rhubarb is baking). Beat cream cheese and sugar until fluffy (or light) Beat in eggs one at a time, add vanilla. Pour over rhubarb. Bake at 350 F for another 30 to 35 minutes.
