I have baked this pineaple pie many times. It ia always a winner at my home. This makes a beautiful holiday presentation, when you have guests. Just rim a larger plate with the cranberries...It looks so beautiful, with any pie. It sets the mood for the holidays. Nancy..Dec. 2012

Ingredients For holiday pineapple pie

  • 1 can
    (20 z.) crushed pineapple
  • 1 c
    sugar
  • 1/4 c
    flour
  • 1 Tbsp
    lemon juice
  • 1 Tbsp
    butter..melted
  • 1/4 tsp
    salt
  • pastry for a double-crust ... 9 inch pie
  • 3/4 c
    flaked coconut
  • 1/2 c
    powdered sugar
  • 1/4 tsp
    vanilla extract

How To Make holiday pineapple pie

    Drain pineapple. In another bowl conbine pineapple, sugar,flour,lemon juice,butter and salt, mix well and set aside. Line a 9 inch pie plate with the bottom pastry. Sprinkle with coconut. Spread pineapple mixture over the coconut. Top with remaing pastry, flute edges and cut slits in the top pastry. Bake in a pre-heated , 400 F. oven 35-40 minutes or until golden brown. Cool on a wire rack. NOTE: For the HOLIDAYS put pie on a larger plate, and circle the pie with red berries and a few holly leaves.
