This is an old favorite of mine. Similar to a chess/buttermilk pie .This makes 2 pies. It is VERY rich and not so pretty of a pie but no worries... It doesn't stay around long. lol. so simple to make too !

Ingredients For cornmeal pie

  • 3
    eggs, well beaten
  • 2 c
    granulated sugar
  • 1 c
    milk
  • 1 c
    unsalted (sweet) butter, cut into small pieces
  • 1 c
    yellow cornmeal
  • 2 tsp
    vanilla extract
  • 2
    your favorite pieshell .. do not prick bottom or sides

How To Make cornmeal pie

  • 1
    Mix eggs and sugar well .
  • 2
    Add the rest of the ingredients as listed. mixing well.

    Pour into 2 UNBAKED pie shell ( do NOT prick the bottom/sides of pie shells )

    Put in a 375* preheated oven(put a cookie sheet under it )for 10-15 minutes.

    Reduce heat to 350* and cook an additional 20-30 minutes

    Pies are done when it is soft-set in center. Cool completely before serving. Serve room temp or cold.
