Cream pies are a big hit in our family, as well as our friends. This recipe is a basic filling for all cream pies such as coconut, chocolate, pineapple, etc. It is also good for fillings in cakes and desserts. This basic filling is so simple and used in all my cream pies. You can add the egg yolks with all the other ingredients, and use a whipping tool while stirring with no worry of curdling. I top the pies with Marshmallow Creme Meringue (posted on JAP).

This basic cream pie filling is a wonderful base for any pie. All by itself, it's a deliciously thick and creamy vanilla custard. We love the suggestions Sena gives for add-ins to adjust the flavors of the filling. We decided to add a layer of bananas and top with fresh whipped cream. It was fabulous! Using a pre-made crust makes this a cream pie anyone can make.

Ingredients For basic cream pie filling

  • 1 c
    granulated sugar
  • 2 c
    milk
  • 1 dash
    salt
  • 1/2 stick
    butter
  • 4 Tbsp
    flour (level Tbsp)
  • 2 lg
    egg yolks
  • 1 tsp
    vanilla extract

How To Make basic cream pie filling

  • Flour, sugar, and salt in your saucepan.

    Mix flour, sugar, and salt in your saucepan.
  • Adding milk to the saucepan.

    Then add milk and butter.
  • Adding whipped egg and butter to the saucepan.

    Slightly whip egg yolk and add to other ingredients in the pan.
  • Stirring until mixture is thickened.

    Cook over medium heat, stirring constantly with a whipping tool.
  • Adding vanilla extract to the filling.

    When the mixture thickens and starts to come to a boil, remove from heat; add vanilla.
  • Basic Cream Pie Filling poured into a crust.

    Pour into pie shell. Serve with whipped cream. Or, top with Marshmallow Creme Meringue* and bake until the meringue is lightly browned. (*Posted on JAP)

    Variations: Chocolate pie - add 3 Tbsp cocoa to flour and sugar. For coconut, add 1 cup of coconut after removing from heat. For pineapple, add 1 small can of drained, crushed pineapple after removing it from the heat. For lemon, add lemon juice to your "taste".
