mimi’s really easy flakey pastry

I've used this recipe for many many years - it is so easy, always so good, and easy to roll out and handle. It is wonderful to have the extra rounds in the freezer for whenever I make pies or quiche. It is similar to another one I was reading this morning, but different enough for me to submit this version!

Ingredients For mimi’s really easy flakey pastry

  • 4 c
    flour
  • 1 Tbsp
    sugar
  • 2 tsp
    salt
  • 1 3/4 c
    shortening
  • 1
    egg, beaten
  • 1 Tbsp
    vinegar
  • 1/2 c
    water

How To Make mimi’s really easy flakey pastry

    With a fork, or in the Cuisinart with knife blade, mix: 4 c flour 1 Tbsp sugar 2 tsp salt 1 ¾ c shortening In a measuring cup in the microwave, or in a small pan, heat gently until fairly hot: 1 egg beaten 1 Tbsp vinegar ½ c water Blend with fork or pulse in Cuisinart until moistened/mixed. (I pulse the Cuisinart until it is clumped together). Place on non-stick surface, or slightly floured surface, cut into quarters, shape each into a flat round, wrap with plastic wrap and chill at least 15 minutes or freeze until ready to roll out for pie or such. Makes 2 double crust 9” pies and 1 9” shell.
