My mother always makes this during the holidays. With them coming upon us (seemingly quicker every year), I wanted to take the chance to share this recipe so others can enjoy it. With a shortbread-style crust, cherry and walnut filling, and coconut topping it, not only makes an amazing dessert, but can be easily "dressed up" for an attractive presentation.

Ingredients For cherry bars
- CRUST

2 cflour
-
1/3 csugar

3/4 cbutter or margarine (softened)
- FILLING

2eggs, slightly beaten

1 cbrown sugar, firmly packed

1/3 cflour

1 1/2 tspbaking powder

1/2 tspsalt

1/2 tspvanilla
-
1-10 oz jarmaraschino cherries,drained,chopped; reserve juice & 6 cherries
-
1/2 cwalnuts, chopped (reserve some halves for decorating)
- FROSTING
-
2 Tbspbutter, softened
-
2 1/2 cpowdered sugar
-
3-4 Tbspreserved cherry juice
-
shredded coconut for decorating
-
walnut halves
-
reserved cherries, cut in half
How To Make cherry bars

1Crust: Heat oven to 350 degrees. Combine crust ingredients until crumbly. Press into pan and bake 12-15 minutes until light brown.

2Filling: Combine filling ingredients and pour over baked crust. Bake at 350 for 20-25 minutes or until toothpick comes out clean. Cool. Frost.

3Frosting: Combine butter, powdered sugar, and cherry juice. Spread frosting on baked filling and sprinkle with coconut, then use walnut halves and cherry halves to decorate top.
