I don't like to use corn syrup in my recipes. Lyle's Golden Syrup is what I use. Yes, Lyle's Syrup doesn't cook the same as corn syrup and you have to learn to cook at tad differently when using Lyle's. I found a recipe for Buttermilk Syrup on the net and this is the recipe was inspired by it.

How To Make buttermilk syrup

I've used tons of different extract flavors and they all are wonderful with the Buttermilk. I have used the flavored oils too instead of the extracts...from Cinnamon to Lavender. In your large pot with high sides, add the butter, sugar, buttermilk and Lyle's Golden Syrup.

Bring to a boil and stir constantly for about 2 to 3 minutes. Till the sugar has totally desolved and everything is well incorporated.

Add the baking soda (it's going to rise till probably more then double) This is why you need a large deep pot! Add the extract or flavored oils of your choice. Stir well over heat.

Remove for heat and once in while stir until cooled and thickened. Serve over pancakes, waffles, french toast, ice cream, cake, pie, puddings or any dessert. One day I am going to try using garlic oil and making a garlic syrup to pour over vegetables and/or meat. I think a Lemon buttermilk Syrup would be delightful over chicken or fish too. And just imagine how a garlic buttermilk syrup would be over meatballs or pork. I will tell you it's wonderful over fruit dumplings and fritters....
